Along with my awesome bread last night, I made a pot roast and veggies. The potatoes are fresh from Idaho and are so much better than grocery store version. It was the perfect meal for a cold, snowy, Sunday evening.
The best part, however, is the leftovers. I like to use the roast and cooked potatoes to make what my mom called "hash." Just cut up leftover roast and cooked potatoes. Drop a blob of butter in the pan, throw in the goods, and heat until everything gets slightly crispy.
My very favorite meal using leftovers! (note: I did not say it was healthy.)
